Sage's History

Sage’s Café has evolved into one of Salt Lake City’s finest destination restaurants. Sage’s Café first served the Salt Lake City community under the name ’The Greens Vegetarian Foods.’ The Greens served fresh local organic foods to the Pioneer Park Farmer’s Market, Gallivan Summer Concert Series, the Zephyr Nightclub, and other exciting local events. Preparing foods at the Farmer’s Market has allowed Sage’s Café to understand the need for local organic cuisine in Salt Lake City. Sage’s activist roots have created a perfect foundation for conscious food preparation.
 
After preparing foods from the food cart for 2 years, the founders Ian and Kelsey Brandt had found one of Salt Lake’s most unique dining spaces. Ian and Kelsey had been going on family walks with their infant son Sage and stumbled across the restaurant space. The restaurant had been the original location of The Other Place, a Greek/American diner (1969-1995). The space was in need of many updates and would be ransformed in the months following. The name Sage’s Café was given to the restaurant in honor of Ian and Kelsey’s son Sage.
 
Throughout the seven years of operation, Sage’s Café has been on the cutting edge of vegetarian cuisine. Sage’s Café has successfully been able to change the house menu to introduce new styles of cuisine preparation. The past years include the international lunch buffet, pizza night, Tast of the World Four Course Tasting, our fresh made tortillas and traditions that continue to this day. Some of these standards include our internationally acclaimed carrot butter pate, tiramisu and Raw Foods Four Course Tasting. Constant improvements have created an elegant and intimate atmosphere seating 38 guests. Our current Service Staff at Sage’s Café is first class with a staff of servers totaling 70 years combined experience in food service. Our current Kitchen Staff is also a first class team of innovative artisans that have 50 years combined experience in food services.
 
rom the first day of business, January 1st, 2000 to the present, Saturday and Sunday Brunch have been a strong tradition at Sage’s. Brunch at Sage’s Café may be the time in which you meet up with friends before a day hike or backcountry skiing. Brunch has always been a time to table hop and visit with an old friend you haven’t seen in a while.
 
Throughout the years of serving at Sage’s Café, we have seen families grow, people moving, people coming, babies turning into children, and teenagers into the professionals of our community. We experience your times of happiness and celebration and are thankful. We have been blessed to be a part of so many peoples’ lives in Salt Lake City. Every person to walk through these doors has been part of the overall creation. We could call it an ongoing work of art.
 
Sage’s Café will continue to evolve with the passage of time and never lose sight of our original mission. Our strongest commitment is our local community. With out the support of the Salt Lake and Utah community, Sage’s Cafeé would not exist. We are here for you! In 2005 we will be celebrating 5 years of conscious food preparation at Sage’s Café.
